told someone god doesn't exist. was told that because nature is so beautiful and how complex everything is, it proves god's existence. I know this is false but how may I prove so? also, because we are conscious and animals aren't (aha) god exists? another proposed statement from the same individual. what would I say? should I be completely baffled by this person's response?

Ask them about the darker side of nature, then when they say that proves the devil exist, say that god must of created the devil, they will agree, and say some bullshit, then ask why as he allowed him to keep up his evil acts, and not killed him.

Show him the film Antichrist from Lars von Trier. Nature is "evil" and ugly too, more often than it's beautiful.

Plus he will probably hate you for making him watch it and stop talking to you for a while. Win win.

Exactly. I believe in god (in the form of higher power), but I dont think it's some white haired chap pointing at the sky. I think god is a lot more complex and personal than that and I came to this conclusion by myself, not because of any religious belief. Its just something I know to be true, it's self evident. I dont, however, expect anyone else to or care whether anyone else shares my view.
