I thought the whole point of brostep was to be as loud as you could. If there is melody, it's just to lead in to a noisy drop. But I don't pay attention to brostep so I guess I can't give a definition. I just know what is or isn't dubstep when I hear it.

Well, from my experience with producing, also with FL Studio, it just comes down to practice.
There isn't really a "theory" behind dubstep, since the genre varies so much - its more of a personal production style.
