I've had the Asus one and the Wind, the Wind was much better.. but still lacking for production. I wouldn't try it in a live setting, it was just too finicky and small. Stay far away from VBR too.
Other than that I use the built in encoder in Sound Forge which is also good.

You can get USB>MIDI interfaces cheap, so you can use MIDI gear through USB but MIDI data only, not sound. Cubase is pretty standard, but depending on your past experience, it could take a while to get your head around. Before buying a DAW as expensive as Cubase, to make sure that style of sequencer...

There are MP3's higher than 320kbps, LAME can encode around double in fact, up to 600kbps+ which is similar to FLAC.
