It's basically just random noise. Either quantization errors or noise suppression artifacts. I once ran the Carebears theme song through iZotope RX Denoiser cranked up to full and the ghost of Noheart came and told me I need to go outside more.

Just automate a sine's volume into a saturator, or automate the drive of the saturator itself. And/or automate a lowpass filter.

It's not really beatmatching if you're lining them up visually. By beatmatching, I mean getting them playing at the same bpm and the beats lined up. I think he means DJing without headphones as in not actually cueing your tracks and just syncing/launching clips? Trying to beatmatch without headphones sounds like a recipe for ka-thunk ka-thunk trainwrecks. Unless you're using booth monitors but that isn't really viable in a small club setup.
