I had a Saffire 6, which was nice, but the cross-platform support wasn't great (no linux). Traded with a friend for Akai EIE, which has more features with lower sound quality and is class-compliant. I recommend either of these, depending on your conditions.

I just downloaded the Linux binary for Renoise. I can tell that the developers approached music production differently than other software sequencers. Also, the demo song is long as hell. I've been listening for eight minutes.

No real reason...could have continued as jrisreal. Smalltock is a general purpose alias I've been using. Thought it was kinda funny. Besides, you'll find my personality quite distinct from jrisreal's.

Well, to be fair, Windows XP is much lighter on CPU and memory than Windows 7, so performance-wise, you shouldn't be doing bad at all.

Sounds like faulty drivers, faulty leads, and/or your synths and whatnot are CPU-hogs. None of your specs are bad. Build a Hackintosh if you want a Mac with superior internal organs that will last for several years (for much cheaper). If you don't want to bother, go ahead and get your iMac or follow whatever other suggestion you like best. :)
