The deluxe editions of Thriller and Off The Wall have some of Jackson's demos on them. The arrangements aren't that different really. Jones just helped him get the sound right and brought in the right musicians to realise it.
Saying that Quincy Jones was the talented one on those records is a bit like saying George Martin was the talented one in The Beatles.

Edit to say George Martin had a lot more input to the Beatles' sound than Quincy Jones did to Michael Jackson's.
