if the vst supports midi learn, you right click then "midi learn" spin the knob
or
you can use the configure mode to make the knob that is midi learnable show up as an ableton style slider used in the other native effects/instruments
and then to go even further drop the vst into a instrument rack and route stuff to the macro knobs

Oh, and on the subject, Ableton is possibly the easiest DAW I've used in regards to MIDI setup.
Press MIDI button at top of screen.
Twiddle knob on screen.
Twiddle knob on controller.
Press MIDI button at top of screen again.
Job done.
*Optional: Save different Live projects with different MIDI setups for nice home-made preset templates, and 'Save as' when woring with them so as not to erase the template.
