there are so many kung fu films its silly.....i think at one point shaw brothers were spitting out 30+ a year....
^^These are some of the best! You know your kung fu flicks. For philosophy, watch "Twin Warriors" (AKA Tai Chi Master) and "Fearless". I'd also recommend the series "Kung Fu" with David Carradine. The philosophy is top notch (Lao Tzu, Confucius etc), the fights scenes...... not so good.
Oh, and if you haven't seen "The Shaolin Temple", watch it....... and "Warriors Two".... THERE'S TOO MANY OF THEM!!

Make sure you watch Ip Man. It's one of Donnie Yen's best. I saw Ong Bak 2 (or "The Beginning" as the western world recieved it) and it was decent. They're working on a third one - there were problems filming Ong Bak 2 which I won't go into just now. The original Ong Bak and Warrior King should also be on your "to watch" list.
If you have an appreciation for fighting in general, Donnie Yen has a pretty ace fight against Collin Chou (who played Seraph in The Matrix) in a film called "Flashpoint" (original film name: Dou Fo Sin).
I've only really been introduced to martial arts films in the last six months or so by a good friend of mine, though the ones I've seen have all been pretty good. In honesty though, there aren't really any deep, philosophical subplots. The only lesson to be learned is "don't upset Donnie Yen, or Tony Jaa".
Oh, on that note, check out Unleashed as well. Jet Li is ace, but the film itself also contains such movie titans as Morgan Freeman and...Bob Hoskins. I think it's also the only film where you'll see Morgan Freeman and Jet Li together in an outlet of Spar.
His mums a Wushu and Tai Chi Master....so hes been doing Kung Fu since he could stand. Apparently when he was a teenager in Boston he used to go around fight clubs kicking ass, so his mum sent him to china to study with the PRC Wushu Team ...hah hah....
