Does anyone else find it interesting that some people don't utilize this technique (currently the poll shows 2 people don't)?
If you don't use this technique, is there a reason why? Is there a different approach to mixing or different school of thought?

uh...
mixing IS gain structure. everything else is just bells and whistles.
w/ that said, plenty of people don't "mix" their tunes and they sound great-- as they've got their own approach to it. but for 9 out of 10 people, keep track of your gains makes a world of difference.

What benefits would I see if I have the final output of the mix on say -3 or -6 over 0 db?

Lets you turn up something in the mix significantly without it going into the red and distorting. Also -3db is good for a mastering engineer as it leaves space to work there magic
