I was in the same boat a couple days ago and ended up spending money to make life easier:

Works great, integrates with Skype perfectly, has a bunch of options. Costs $20 (US) though.

I tried a lot of cheaper or free methods and they never quite seemed stable.

Breathe in deep, hold it deep, exhale deep, you got yourself a good hit.

Audacity, it's a great free audio editor/recorder. I use it all the time for recording mix CD's or grabbing cheeky samples from videos etc. I'd recommend it to anyone. I've never tried to record a skype conversation myself, but I'm pretty sure it'd work. Obviously have a quick test before you do your interview!

totally this. its free and works perfectly! just remember to save your project before exporting, because its not the most stable of programs.
