This is pretty tough to decide. I listen to a lot less metal than I used to before dubstep entered my life, but these are the bands that stick with me, in no particular order:
1.Converge: Sums up the emotional core of metal for me really, these guys know how to put all your nasty emotions into musical form, whether it's a big technical mindfuck or slow, crushing riffs.
2.Misery Signals: I don't know anyone else that can write music with so many time changes and dynamics that's still really memorable and anthemic. They write some absolutely beautiful melodies and atmospherics, and their lyrics are some of the best around
3.Dillinger Escape Plan: Some of the most creative guys in music, I love how they started off as the most confusing and dissonant band around, then over the years they've managed to mix in all sorts of interesting electronic, jazz, even pop influences while still being absolutely mental when they need to.
4.In Flames: They've gone pretty far down hill in my opinion but their earlier stuff like Subterranean, The Jester Race and Whoracle had some of the greatest guitar melodies I've ever heard, and I'm sure that no matter what genre of music I try and write, subconsciously I'm always trying to be like them
5.Mercenary: These guys aren't that original, and they have some pretty duff tunes, but holy shit when they're on form they write some of the catchiest, most uplifting metal songs on the planet. They have a very special place in my heart cos the riff from Lost Reality was the reason I bought a MIDI keyboard which in turn lead to me experimenting with music production and the path I'm travelling down today

I haven't been listening to as much metal as I used to, but I'm still a huge fan so here we go...not in any particular order:
1. Tool - Sublime, psychedelic, heavy, jammin', and all around a treat for anyone who likes to dissect music.
2. Blotted Science - must be heard to be believed. Jarzombeck (guitar) takes a radical but coherent approach to tonality, but besides that it just fucking rocks.
3. Psychotic Waltz - Rockin' that Eb tuning. Imagine Iron Maiden, but eerier and more progressive.
4. Dream Theater - Not so crazy about most of their newer stuff, but damn those guys could nail it when they try. Not so sure what's going to happen now that Portnoy's gone though.
5. An Endless Sporadic - Very much a newcomer, and their first album isn't remotely metal, but their EP was just 20ish minutes of pure awesome.
