Depends on the night and the crowd it draws.
On a Sublow bassy set i start with Dark light by Skream or Higher By Breakage
On a Jump up set i start with garage just to mix it up, Either Dj Narrows - Saved soul or Azzido Da bass - Dooms night

Appleblim & Peverelist - Circling
And when I'm playing at a house party with my friends (open-minded brosteppas) I open up with a Kryptic Minds track, Badman or Organic. And then I build it up with Distance, Tunnidge etc

Listening to Dieselboy has taught me to always start a mix with an intro and a power song. Instant hype. This of course, works well if you’re the Headliner. If you are not, it really doesn’t matter. LOL
Re: What track do you start your sets with?
not matter the set
and always mix
