for example one could argue that dubstep takes its roots in late 90's-early 2000's UK garage and broken beat, both genre have a lot of "soul" influence, like vocals, organs and whatnot

I would say dubstep still has a lot of influence form dub. It is mostly just drums and bass. Striped back rhythms. Striped back sounds to focus on the bass and drums.
