Something totally mono will be a straight vertical line. Something 100% out of phase between left and right will be a horizontal line. A monophonic sound panned hard left right will be a diagonal line.
In truth they aren't really all that useful - obviously too straight/centered means there's too much in the middle, too fluffy and horizontal means there's too much width... but if it gets to the point where it's that visible, one would hope to already have heard it
FWIW I use one on every track I work on, as the analogue gear can shift things left/right a shade. I mono the track pre-analogue to check it's all coming back centered before recording the final version. So it's handy for things like that
