I made some kosheri with the tomato sauce yesterday which was pretty nice. One of those things it's great to do a big batch of and then eat for the next week or so. It does require some heavy multitasking if you don't want the whole thing to take three hours. I did the ottolenghi one; I'm embarrassed by how much of his stuff I'm posting.

For easy, quick food I'm a big fan of Jamie's Spaghetti Alla Trapanese. No more than ten minutes to do if you have a food processor:

make a big batch of seasoned butter and stuff the skin with said better, salt and pepper the skin, stuff it with lemons and roast it on top of onions and garlic bulbs

If you roast chicken and it come out dry, it means you're doing it wrong and overcooking it. Allow those bags.

you keep the chicken moist by basting it tho and it makes the skin crispy
there are recipes for vacuum sealing things and boiling/steaming/heating them through
but boil in a bag dinners aren't my thing, wont be convinced

I can cook very well so don`t mistake my bag usage for bad cooking.
I just find it is easier and cleaner to cook with these bags.
When I`m done I just take the contents, fold it up and throw away.
That`s it for cleaning other than the plates and cutlery.
Plus I don`t roast whole chickens anymore.
I only really eat breast meet anyway.
So we throw 4 breasts in with some veg.
Good to go.
I`ve made many an awesome roast chicken with an orange up the bum.
noam - that is not a boil in bag for farks sake.
It`s an oven roasting bag.
