Because we are the only animals intelligent enough to question our existence and try to formulate an answer.

undoubtedly theories are partly a result of language
language is our representation of our thoughts but also governs them
different cultures with different languages literally SEE the world differently, there are concepts that actually don't cross language barriers, but can only be understood in a particular language
but the core idea is language is a representation of specific types of information
information is the key, certain languages best represent certain types of information
numbers best represent the information contained in mathematical theory
certain combinations of symbols best represent physical theories
etc.
words are the least accurate depictions of information since they can be so abstracted by interpretation
In my opinion the whole concept of god religion started for many reasons. Ancient peoples didnt have the slightest understanding of the world compared to what we do. They had the stars in the sky, unreachable but fascinating, the sun kept them warm during the day, kept their crops alive and at night it turned into the moon. The rivers and sea provided them with fish, wind, rain, thunder and lightning were factors that could affect their lives. A drought could kill them, a flood could do the same. Without knowledge or understanding of any of these things its easy to see how they attributed it to gods,spirits and magic so they thought that honouring these spirits and gods through religion was the best way to satisfy them.
Fastforward to modern times, people claim they are intelligent and rational yet they still put faith into an idea and concept which is totally unrational. I cant think of one 'man made' feature world wide ancient or modern that is too spectacular or amazing that it must be the work of a god.
