I would go with a Phenom II X4 965 CPU instead of anything by Intel mainly because of the price and that when they say you are getting 6 to 8 cores, you are actually getting real cores from AMD. A 1000 Watt Power Supply like Rosewill that will cost you $100, and just in case you plan on doing some music video making and editing; it will be easy to add new stuff to without needing a new power box. I went overkill on RAM so I don't think you will need 32GB of RAM unless you plan on doing much more than music production, but 8GB or 16GB will be just fine; especially with a quadcore running at 3.4GHz(somehow mine jumped to 3.7GHz over night and is still stable). The sound card I would recommend is a Creative Sound Blaster ZxR. You will hear everything that you couldn't with your built in soundcard on your motherboard.

I'm also looking to buy a new PC for production, and have done a wee bit of research on here, and in books etc so I have a pretty good idea of specs I would like.

I guess the main thing is that I'm not confident in building a new PC myself, so was just wondering:

Can anyone recommend me any sites/shops etc where I can choose the parts myself and have the PC built by them?

I watched these when I built mine. First one's on parts, second on the actual build. It's really easy. Those 50 - 100 bux could be going to a better processor or motherboard.

I'm the least technical person ever and I built my best pc. Did it a year ago and it still runs smoothly.

I can't recommend anything because a lot of the sites charge you for the computer guts more than they are really worth, just like how apple does. You can always buy the parts that you want yourself, and they hire someone or talk to a shop that would be willing to put it together for you. I know a few people that did that. It would just be terrible to spend so much for things that are not that expensive.
