98 SE or XP Pro for a desktop are perfectly acceptable. Windows 2000 Pro only ever looked good because the alternative was Windows ME. I still have to work with the server version surprisingly frequently and I honestly prefer it when I find NT4! Gash.
Ha! Was just about to say: "Beats Windows ME". It's not that bad. IMO beats Windows 8. 2000 was pretty straight to the point. No crazy transitions, no ridiculous hidden functions (within nerd reasoning), just a plain simple interface.
I'm still using Win 7 because of the compatibility and how its as good as XP, but IMO 8 has finally caught on because people gave in to Microsoft. On top of that, most people don't know how to reformat their new laptops and desktops they bought from BestBuy so they just dealt with it.
I used WIndows 8 for about a month and a half just to see if it was another "Windows XP is amazing so why would I switch over to 7?" scenario, but I just couldn't deal with how gimped the system felt. On top of that, a lot of my older games weren't compatible with the OS (or they required a million workarounds). I think within time, Microsoft may release a wider variety of GUI's and patch a lot of compatibility issues with legacy software for Windows 8, but until then, I am content with Windows 7.
