You should try this one Grandee
http://www.ivu.org/recipes/indian-veg/pachadi.html
Just had it - was lush. You might want to go easy on the chilli if you're not into the badboy flavours (or don't use two scotch bonnets like I did)

Hmm....

Rice. Should have done my usual trick of throwing in some cardamon pods too, really makes the rice lahvely.
Found a recipe for mango salsa too, which I think was
1 mango cut into small chunks
1 scotch bonnet
Lemon juice
Vinegar
Sugar
1 bell pepper (or if you're british a pepper)
Is fucking lush if you're into mexican food, probably worth getting something cool to eat alongside it - is a little bit woaaaah

Hmm....

best rice- fry a bit of cinnamon stick, couple of cloves and cardamons, some cumin seeds and a bay leaf, then chuck some finely chopped shallot/red onion - when it browns add the water and rice, boil the buggery out of it then when virtually all the water has evaporated chuck some finely chopped coriander+mint on tip, cover and take off the heat (or take it really low) for 10 mins.
I was always anti-fruit in meals but i've softened a bit of late in tagines and curries, they actually are quite nice.
