Apparently (I heard on a forum, maybe this one even!) V.I.P. came from dubplate culture, whereby a producer would create a slight variant of their tunes for a particular dj (e.g. splicing the dj's name over it or something, or variance of arrangement)...for a dj who was special in some sense to the producer, hence Very Important Person mix. Then somehow it has become used for general remixes (generally it seems to be used for remixes which adapt the tune with more of an eye on the dancefloor)
