I heart meatloaf. I've only had it in the US, always meant to make it myself here in the UK but never has. Can I has your recipe Belly boo?!

Awww I wish I had one written down to give you but I kinda....play it by ear. I can tell you what I did but not the quantities--though I believe in not using too much of any one thing because you never want to be overwhelmed by too much flavor. A nice clean savory blend is goal.
First I sauteed some diced portobella in a lil olive oil and a splash of red cooking wine until they wilted enough. Moved them to the side. Then I minced some carrot, half an onion, and a few cloves of garlic. Put that in a separate bowl. Then (partially because I was impatient--too impatient to marinate like normal) I seasoned the beef (2 lbs.) with a lil salt and black pepper, basil, parsley, oregano (teensy amounts tho....hard to pick out exactly how much but less than a TBSP combined total for the herbs), splash of Worcestershire, and a lil more red wine.
Then once seasoned, combined them all in a big bowl with the fresh veggie mix. Then drained the mushrooms and added those and more smooshing. With the portobella reduction left over, added a lil flour and water to make a lil gravy (a dash corn starch to give it body) and then added that to the meat mixture to act as the adhesive agent instead of eggs or breadcrumbs.
Finally, once all ingredients were combined, put it into a big loaf pan and slow cooked for an hour under foil at 350....and then an additional half an hour after pouring off the beef grease with no foil at 350.
Thats as close to a recipe as I can give. I had to just constantly taste and watch and measure but thats ok. I like cooking
My apartment still smells divine. And it was really tasty and savory just...I wasn't hungry by the time it was done.
