If you insist.
- 1 cup brown sugar
- 1/2 cup butter plus 1 tablespoon, softened
- 1 egg
- generous splosh vanilla extract
- 1 1/4 cups whole oats, finely ground in a food processor
- 1 cup white flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- butterscotch morsels to taste
- white chocolate chunks to taste
Preheat oven to 375. Grind the butterscotch morsels into smaller pieces in a food processor, and chop up a good amount of white chocolate - I like Nestle and Lindt brands, respectively. Either cube and leave the butter out on the kitchen countertop for an hour to soften naturally, or soften it in the microwave, and cream it with the brown sugar in a mixing bowl. Beat in the vanilla and egg and continue to whip. When mixture has reached a light and fluffy texture, slowly fold in the flour, oats, baking powder, baking soda, and salt. Then add the ground butterscotch and chunks of chocolate. Mould dough into balls and bake for about 14 minutes. Makes about eighteen big bakery-sized cookies per batch with 2" dough balls.
