pretty simple:

sirloin steak (small), sliced in half so you have 2 really thin steaks. tenderise.

layer with plenty of fresh shredded basil, then whack a fistful of grated manchego on top. Roll up and secure with cocktail sticks, so that you've got a 'tube' of steak filled with cheese & basil.

medium/hot griddle pan, sear all over, should take about 3-5 mins cooking time depending on how thick the steak is - you want the cheese to just start melting.

Serve with cherry tomato/basil/red onion salad drizzled with balsamic. :P

been cooking a lot of pies of late - sausage & leek b2b puff pastry. :5:

so you'r saying that after starting w/ a single steak and slicing it thru the middle that you'll end up with 2 manchego steak rolls yeah?

or do they go back together after slapping the basil and cheese on top? -q-

nah not back together, just each thin half of a 'steak' gets wrapped around the cheese/basil stuffing. So you have 2. ;)
