Word! I've been making 'proper' curries for about a year or two now, and it takes a full day (excluding marinade time), it's alot of work, but really really really worth it.
Get a slow cooker. Good for Mutton based curries. Prepare everything during the day (pastes/garam masalas/masses of fried onions) Stick it into the slow cooker overnight (on low) and have the most intense curry the following evening. Make sure the Mutton is on the bone though as it'll turn to mush if you don't.
I havent been making my own garam, i go to an indian shop for that, what is it? just a mixture of spices? It is fucking mental how much onion goes into them! Also funny when you make a curry for someone that 'doesn't like onions' and you say there's no onion in it, and they love it.
I put about 6 onions in a curry for 4 people
Yeah Garam Masala is a spice mix. Good to put in the end of the cooking process to add a boost to the curry. Here's a recipe which i haven't tried but looks decent
http://www.ochef.com/r75.htm
Also buy some Asofetida, it comes in a small yellow container and you can buy it from most indian/pakistani groceries. It smells like rotten eggs but brings out an amazing flavour when you fry it with the onions (1 tsp)
I put asofetida ("hing" in most North Indian languages) in my baked beans.
AND WHAT.

Agree with most of what you've said, but I think comparisons between different styles of cooking don't make much sense. It's always going to be as deep, complex, subtle or involved as you make it. I mean, Heston Blumenthal could probably spend three days making beans on toast...

Being British is about being related to nearly every other country and them not wanting to acknowledge it. It's like being king of the surrogate wombs in a time where sperm must conquer

not many people can accept, even today, that queen victoria, one of the most famous monarch's was essentially.... german. the kaiser, the guy that was largely responsible for WW1 and killing hundreds of thousands of english troops....was queen victoria's grandson! so the fact is that british soul food runs deeper than battered fish and chips. its really a lot of weissbrod, schitzel and pints of warsteiner or becks.

surely being British
involves something more profound
than liking bacon curry with chips
or even being a melting pot of races/cultures
(that happens in US, Canada, Oz etc)
or having a stiff upper lip for that matter.
Is there really anything that differentiates the British from other nationals?
Are all the old stereotypes defunct?
Are our differences now superficial?

I'd say the same goes for America and the USA in terms of us all being crossbreeds.
http://en.wikipedia.org/wiki/Maps_of_Am ... ancestries Americans have a good deal of German ancestry in many areas too - not that that isnt ok..

I actually think out of all the British stereotypes the teeth thing is the most accurate. I hadn't actually noticed up until lately but most people here do have pretty yellowish crooked teeth, mine are stained, my Dads are almost black. It's not the sort of thing you really notice in a person though tbh, although I imagine if I went to America people would recoil in terror at the first sight of them.

The ruling classes are a different breed from us normal working folk though really.
It's strange how the stereotypical Brit is based on a posh upper class toff, when it only applies to about less than 1% of the population. It's funny cause when I'm on Xbox Live mic, all the yanks presume you're an Australian if you don't talk in an RP accent and say things like 'TALI HO!' and 'PIP PIP CHEERIO'.

yeah but to be fair the idea that people 'cant handle' the truth about our Royal Families German heritage is bollocks because most people i know (who actually live here btw) know and dont care... cos the Royal Family is about as important to them as their next fucking dental appointment.
end of the day who gives a shit about what being British is...its a tiny island filled with 60million people all with different histories and ancestors. stop trying to label things. humbug.
