Maybe it's beacause i use to drum and dance cuz i really don't find it difficult....
I beatbox now for like 10 years and sometimes i record my own hi hat beatbox pattern and then try to recreate it with actuall hats....it's also pretty handy cuz you can see how you need to edit the velocity....and there are no limits:)

but one think that you can do in ableton is program a somewhat basic hi-hat pattern in a drum rack. or even a more 'complex' one. even place hits randomly. then freeze and flatten whatever you record. then slice it to a new midi track or whatever the option is called. you can then throw the arpeggiator on this midi track. play around with the sync rate, steps, repeats, style, etc.
and in 7 there was the button next to the time signature box...where you can increase the value to apply a groove....raise that up....
maybe the groove box makes that thing unnecessary? i don't know.

Have a listen to what's going on in your favourite tracks with swinging, shuffling hihats. Then try and copy it and add swing just to teach yourself. Then you'll find it just clicks into place. There's some great presets in ableton. Just have a little look through the 16th ones to achieve a more shuffled sound then reduce the timing amount and possibly the velocity.
Also getting a really rolling funky 2-4 bar part from a tune- maybe some 2step - and extract the groove.

Beats certainly dont need hats, they can be very good for the energy though

i do a lot of diff shit to my hats but one way to make em shuffle is to unquantize. either by playing them in midi or turning off your grid and moving them by hand. in ableton ill copy a hat sample on say...1/8 notes then ill go in and turn the grid off and move samples back or forward to get the swing i want. and definitely use more than 1 hat sound. i typically use 3-5 diff hat sounds that play off each other and then pan them in different spots so they are skattered across the stereo field. got it?
