Nearly always have two tracks on the go. I think when your working on something for a while its hard to here the track for what it really is, harder to tell whats lacking.
So its nice to switch to a different track to give that one a break, often what will happen thou is I'll end up only finishing the first track I started but I might end up using a lot of the sounds I made for the other track.

Anything over 2 never seems to go well, jumping between loads of different project files, cus of memory problems I got seperate project files for drums, bass, synths, atmos multiply that by say 5 tracks and you got 20 project files, thats way to messy for me you'll end up spending more time loading up and bouncing projects then you will working on them.
