I'm pretty sure any audio editor will do the job!

@Laichzeit - think people are mentioning audacity as it's free!

I use winlame (google it) to encode all my mp3s, it's really simple and uses the lame encoder, so it sounds nicer than a lot of encoders bundled with audio editors imo.

If you're recording your own live sets then Voxengo do a free Recorder, which can record anything that goes out the master buss to a wav file...
