I don't know shit about Linda Mcartney's food but in Seattle there's a company that makes what they call grain meat even though it's really nothing like meat at all but it's top notch. I can't speak for every vegetarian but for me it's not as much about having meat substitutes as it is a textural thing. You should try Veat.I used to be veggie and it is a great chicken substitute in my famous enchiladas and tamales.It's got the same exact texture and tastes almost like chicken,but will exactly taste like it if you season it a little extra(I use butter and poultry seasoning for roasting,or cumin,garlic,coarse ground black pepper,salt,and red pepper to spice up for mexican food.In a mole,I just smother it in my homemade mole de pollo sauce).Also makes for good veggie chicken curries and "bbq pulled chicken" sammiches!:D
