I have a contract signed with a couple of large groups, which is my bread and butter. The rest are mid-sized companies, hospitality groups, hotels and various professional businesses.

Unless the particuar job is worth a lot and you secure a tender, most companies won't want to sign anything. So yeah, it's more or less a handshake deal.
