how do you break them in btw? i know you've got to do it with steel woks but will i have to do it with a cast iron griddle?

Just give non-sticks a good clean tbh... none of the blind baking shit like with old Woks. A pan doesn't feel 'mine' until I've made a fry up in it though.

On cast iron stuff its a good idea to not use a lot of cleaning products if any at all
