I've been meaning to do this for a while, but the bpm of the choir is unsteady, so it meant a ton of splitting and rearranging. The mix still gets a bit iffy at times, but not enough to interfere with the average beat.

Fair enough. I'm new to this; I can't expect to get it right out of the gate.
What should I have done differently?

It's quite a frantic sample - difficult to make sense of.
Also, try playing around with the beat, shuffle things up - everyone's making half-step.
But I certainly don't want to come across all judgemental - its a matter of opinion really. I have a lot of respect for anyone making music really.
