A few of my faves:

El Yucateco XXXtra Hot Sauce:
Pretty much the hottest I've ever tasted,and I have tasted about 150 of 'em.It's pretty much straight Habanero paste with a tiny bit of salt and a hint of vinegar.Thier "mild" sauce makes you sweat profusely,if that's any indication.

Tuong ot Sriracha:
The greatest hot sauce EVAAAAAAAAAAHHHH!!!

Tapatio:
A South Cali standard.And for good reason.Most salsas at mexican restaurants taste good on thier own food,but not on other eateries' food.Tapatio is the only one I have found that goes with all of it...even Del Taco!!!I always have a bottle on hand...

dude. come ON. you already mention the two best hot sauces in the world. sriracha and tapatio! what more is there? the only thing i've never liked about sriracha is when its been in the fridge for a while, and you open it, and the sauce sprays all over the place... its like theres some gas build up in there or something...

regardless, sriracha and tapatio are the BEST.

in a close second are louisiana red hot sauce, and red rooster.

sriracha is all over the viatnamese restaurants around here... love it, what else does it work with? and we carry tapatio at the restaurant i bus tables at. did i mention its a pancake house? hehe...

I make my own and it rules over all.
37 Scotch Bonnets
1 Bulb Garlic (peeled)
1 big chunk root ginger (smashed)
2 Onions (roughly chopped)
1 pint white wine vinegar
2 Mangoes
2 Young Mangoes (unripe)
2 limes
500g Brown Sugar
1 Tbsp salt
1 pint water

Fry Chilli,ginger,Onion and garlic till soft (5 min)
Add peeled and chopped mangoes and Sugar stir thouroughly.
Add Vinegar, 1 pint water and juice of 2 limes.
Bring to the boil,reduce heat and simmer for approx 4 hours.
Blend all ingredients then sieve.
Sieve carefully dont get it on your hands it burns like a mutha fucka trust.Discard the mush and keep sieved liquid.Should make loads keeps for years if kept in sterilised jars.

tapatio and yucateca are essential fridge inhabitants, although picamas has been getting a lot of use around here recently.

I picked up some hot sauce is Northern Spain that is, oddly enough, actually quite hot. L'horreu. Good stuff.
