Vex'd - Bombardment of Saturn

edit. ...but the recording that really opened me up to the possibilities of the sound was a Jah Mek the World Rinse radio show rip I downloaded from DJ Rupture's blog sometime in 2005 (the post, link gone old).

Lightning by Skream

Simon at Tribe kept playing me Dubstep and this was the first track I properly listened to, and got me into the sound.

probably the Grime compilation on Rephlex, was particularly into Plasticman - The Music and Industrial Graft if I remember rightly, might have been something before then but i wouldnt have known it was called dubstep before that.

edit - actually it would have been Red by Artwork but i definitely had no idea about dubstep back then, if it was even a coined term at that stage.
