I think you need 64bit XP for Quad Core if it supports it at all, everyone I know with Quad Core runs Vista, since you know, they can... haha.
I run a Dual Core on XP32 Professional SP2.

SP3 for 32bit XP makes better use of multicore processors but I personally havent had any problems with vista64. been using it for a while, its not crashed once, i aint had any problems with incompatible drivers for my studio gear, and only 2 bits of software i used to use dont work on it and in both cases Ive found better software that DOES work.
if your gonna go for a quad with a 64bit windows OS go for vista64 everytime.
if your gong for a 32bit windows OS then theres not much between vista and xp, both will never use the chip to its fullest and niether will allow you to use more than 2 gigs of ram (just over 3 gigs if you use the 3gig switch)

Isn't vista still lacking the stability for a decent DAW? Missing drivers, etc?

Definitely the case. It's probably the least supported os.

64bit - Vista pisses all over xp
32bit - you'll have less compatibility issues with xp
benefits of 64bit over 32bit - more ram and will make the most of that quad
simple
