i could go on forever naming rappers.. but i assume you're looking for instrumental hip hop.
most classic rap albums have instrumental versions out on wax (anything from the first wave of wu-tang releases is a good place to start). also check out these labels:

The again it's pretty difficult to pinpoint genre's these days with everything spiralling off in whatever directions so my advice is to google/youtube this stuff... it's really what I'm listening to at the moment anyway:

Wireblock Records, anything from Low End Theory, Stuff Records, Mary Anne Hobbs video on the LA Scene, Luckyme mixtapes(on their website - mixes from rustie, hudmo, mike slott etc etc).
