Concerning structure... take a tune you're into and copy that structure? Acceptable if it's the first tune you're ever gunna make.

It is important to keep structure in mind when producing, however following a set formula restricts creativity. My advice is lay your track out following a standard structure, with phrasing being multiples of 4 (when in 4/4 time). Now that you have your "structured track" listen to it over and over again and move things around some. Straying from the standard structure is what makes your sound unique. I produce with ableton and have an apc40 so another method I employ is setting up a bunch of tracks with clips, then I start jamming and record when I find a combination of clips that sound good together. Once I have several chunks of song I go back and work on connecting the different segments.

edit: I figured it might also be important to mention that while my production may seem amateur, I have a firm grasp on musical theory. I started taking sax lessons in the 4th grade, piano in the 5th, guitar in the 6th, drums in the 7th, and bass in the 8th, and I am almost 23 now. I know a lot about theory, I just don't always implement it well.
