Native Instruments have an organ VST called the Hammond B4 (used to be B3). They also have plenty of stuff in their Komplete package. Applied Acoustic Systems have various options too including Lounge Lizard EP-4. http://www.applied-acoustics.com/products/
But all that costs money, so you'd probably be better served by checking out the plugin 'finder' function on KVRaudio.com (http://www.kvraudio.com/q.php). Just type in 'organ', 'keys' or whatever and plenty will come up.
You may also want to check out the Dub Scrolls website where they have plenty of info on producing reggae/dub and also provide some custom VST FX. (http://www.interruptor.ch/vst_donationware.shtml)
If you're using Reason, then the sound banks that come with it contain plenty of stuff which can be used by adding effects etc.
An alternative for non-Reason users may be Steinberg Hypersonic which contains loads of different sampled instruments and makes layering very easy for some great results.
Finally, Kontakt is by far the most widely supported synth/sampler platform out there in terms of third party content. If you go down the Kontakt route, searching Google or KVR for Kontkt soundbanks should yield plenty of results for every kind of sound set and instrument you may desire!
