Yeah, you will actually. Not as fluffy as with milk though. If you have some fizzy water, you might want to use it instead.

Hmm, have you ever made pancakes? I use white flour. Get some water and soy milk mixed, add some sugar and a little bit of salt. Add flour in portions, beat like crazy, until you get good runny consistence. Let it stay aside for 10 minutes or so, beat again, fry. First one usually breaks, you will see how the consistence works, then you can adjust it a bit.

I would think you would need some kind of leavener, like baking soda and powder.

Here:

6 cups flour
1 tablespoon salt
6 oz sugar
1 tablespoon baking soda
2 tablespoons baking powder
3 pints either milk or buttermilk (you can make butter milk by adding vinegar to the milk. Usually 1oz vinegar to 8oz milk)
6 slightly beaten eggs
3 oz melted butter
vegetable oil for pan.

Combine dry ingredients. Combine wet ingredients and wisk. Combine both wet and dry ingredients. Mix until only slighty lumpy.

Makes 10 cakes.
