If you're having a proper Italian thin crust pizza, cooked for seconds in a ridiculously hot wood oven, then this. ^ All about the tomatoes and the slightly charred base.

I think I'm learning languages from this thread...

But then I was thinking - What is my favorite italian dish...
and right now - for me - that would be Penne Alla Matriciana...
and when I went to look it up on the web I found it was being spelled...
All' Amatriciana - which I then found out - is the "greater' italian spelling
whereas Alla Matriciana is a Roman dialect...Romanesco
which in America - gets the alla dropped to be just Penna Matriciana
which is then pronounced ma-trish-e-ana
unless you're a snob/cigarette - which I get pegged as - because I say ma-tree-ci
and get into arguement's over the phone when ordering to-go.
I'm gonna start saying....can I get the penne wit bacon and ham please.
