they have that kind of thing all over scandinavia and in russia too, i'd not heard of it till went helsinki and st petersburg...not sure what i think of it to be honest, but i ate quite a lot

Epoisses de Bourgogne, cheese 'refined' with liquor (marc de Bourgogne).

La Burrata, could be the queen of mozzarella. Gives the word sumptuous a whole new meaning.

Pecorino al tartufo, hard cheese made of sheep's milk and a bit of truffle. Pure delicacy and yet not too pricey.
