I know its a bit of an amateur question, but how do you do these on logic, and what are they used for/usefull for?

Is bussing kind of the same as return channels?

Not as such.
A bus is basically where you have a number of channels routing through a single channel. So for example you could have;
Channel 1 - Kick 1
Channel 2 - Kick 2
Channel 3 - Kick Bus (both kicks)
Channel 4 - Snare 1
Channel 5 - Snare 2
Channel 6 - Snare Bus (both snares)
Channel 7 - Drum Bus (Kick Bus & Snare Bus)

Whereas a Send you might have setup with a Delay or Reverb on it, and then control how much wet/dry signal from one of your channels (for example, Kick 1) is going to the Send at any time.
