Yes, you can totally do this in Logic with the EQs. If you open up a Channel EQ on a audio/instrument strip, you can see the automation parameters on the arrange page.
It has eight frequency bands: lowpass and highpass filters (in the pick, the first and eighth buttons near the top, both grayed out), low and high shelving filters (buttons two and seven, they look like wishbones), and four flexible parametric bands (the four buttons in the center).
Then, on the arrange page, if you go to a channel that you want to apply automation to, you use the drop down menu on that item. Here's the list of what you can automate on the Channel EQ, on top of the master parameters like muting that strip or bypassing effects on that strip:
From the High Cut Frequency all the way down to the bottom, those are the parameters you will want to mess with. The column of three paramters for each button, at the bottom of the EQ, those correspond with the list. Top figure is Frequency, middle is Gain, and bottom is Q-Factor (a.k.a. resonance). The On/Off will toggle the buttons at the top of the EQ.
Another thing that I don't know if you can do in Ableton, and I didn't see it in that video, is you can analyze the sound you have the Channel EQ on, and see how it is reacting to the automation.
Does this help?
