Modulate Cutoff w/ "ADSR" (Attack, Decay, Sustain, Release)

This always gets me in VSTs such as NI Massive and Sylenth1.
Let's say I wanted to modulate the cutoff. I understand how to do that with LFO. The shape of the "curve" controls the knob of the cutoff, right? But how control the cutoff with modulation envelopes? (Attack, Decay, Sustain, and Release)
What I've figured out on my own is that the "Attack" is how fast it takes for the cutoff knob to move from its start point to its finish point (I think..) but that's about it.
If someone could explain how this works, that'd be great. Thanks!
