Writing a tune and mixing down on different systems?

I have headphones I use for mixing, and though their frequency response seems fine, I noticed that if I write tunes while listening on them and then mix down on them as well, my mixes didn't sound nearly as good on other systems (ipod earbuds, car stereo, etc) The volumes of some elements are too quiet or loud.

I think the problem is that because I write with those headphones, I kinda have an idea of how they are supposed to sit in a mix, and my brain kinda fills in the blanks until I switch systems. Is this normal? SHould I write on one system and mix on another? Or do my headphones suck?

I use Shure SRH840

Listen on as many systems as you can. I'm currently mixing down/playing back on;

- Behringer MS40s
- Sony MDRV700s
- Sennheisers MX470s

I'll mix on the Behringers as I go, tidy up on the Sonys, the bounce to MP3/WAV and listen back on the Sennheisers. Keep a notebook with me at all times, to make a record of any corrections etc that I might need to address.
