Look under the tool menu on the left hand side of the matrix editor window - you'll see a box with /"number" - if you hold down the left mouse button on this box and pull up or down, you can change the grid spacing from /4 to /192 of a bar (or a wholestep to 1/48th of a step). It won't show them as 16/t though, swung 16ths will be shown as 24ths, swung 8ths as 12ths (divide by 2 and times by 3, but it should be pretty obvious when you look at the menu).
The q button underneath this is what allows you to quantize particular notes - highlight the note/notes you want to quantize by clicking on them, circling them or hold down shift and click if you want to bring several notes into the same quantize, then press the q button, a menu will come up and you can select the quantize you want to use.
Rather goes outside the remit of the question, but something I found useful in Logic recently was the humanise function, which shifts the notes in a bar by a tiny amount to give it a more human feel. Select the section you want to humanise in the arrange window, go to the transform window, click on the menu on the top left to open the options list and then click humanise, then operate, and your groove will suddenly be offset just enough to give it more feel.
Hope that helps
